Salt & Pine Chef Jeff Bereznay plans to add something new to the menu very soon. He gave us a hint or two, and he also shared some of his thoughts about food and cooking and, of course, downtown. Bereznay graduated from the Culinary Institute of America in New York City, and moved up the through the ranks of Grow Restaurants (think Harvest and Third and Hollywood). We also like the fact that he has ties to central Ohio—his wife was originally from Columbus, and Jeff lived the first six years of his life in Athens. So, in a way, he’s back home, and he’s impressed.
“There’s potential in Columbus to make your mark here,” Jeff said. “There is a lot of revitalization going on
, and it is very appealing to me. It’s exciting to see something go from a construction site to a neighborhood.” Salt & Pine provides delicious inspiration to this growing neighborhood, and lucky for us as Jeff makes his mark, our stomachs will all benefit.
“Modern chefs often specialize, but I like to see what’s good right now, and what I can do to elevate it,” said Jeff.
As he creates his new menu, one of the things he’s most excited about is a ravioli dish he’s been testing, which is constructed in a way that you would never expect. “They're fun to make and great to eat,” he says. “I’m also drawn to southern and Appalachian cuisines. They marry well with local ingredients.”
